Creamy Quorn and Coconut curry
Top recipe here coming straight outta my mum's veggie cookbook.
Prep time: 15-20 mins
Cooking time: 20-25 mins
Serves: 4
Ingredients
2 tbsp green curry paste
350g (12oz) Quorn pieces
300g (10oz) Sweet potato
450ml (3/4 pint) vegetable stock
450ml (3/4 pint) coconut milk
3 tbsp fresh coriander (chopped)
Method
Pre-heat wok or pan and stir-fry paste for 1-2 minutes
Add Quorn and sweet potato and fry until its brown
Add hot vegetable stock and coconut milk and heat but don't boil cos the flavour will get messed up
Reduce heat, let it bubble away for 20 minutes or whatever until it looks thick enough and the spuds are cooked
Chuck the chopped coriander all over the top and dish it up with rice and some nice salad or some asparagus
